The 27-year-old former Hatters trainee made nearly 300 appearances for Luton before joining United in the summer of 2004 and then Watford a year later.
Hornets boss Aidy Boothroyd said: "I think Matthew was brilliant for us. I'd like thank him for the part he played in helping secure promotion."
